Section 1 – Farmer

Palm trees are maintained to produce sap. The sap is usually collected twice a day, morning and evening by experienced farmers. It starts with harvesting by tapping the sap and collecting it in bamboo tubes.
To remove dirt and other contaminants, the fresh sap is filtered through a fine mesh strainer.
After being filtered, the sap is boiled in a large pan for about 3 – 4 hours to reduce the water content until it becomes very thick/paste at a certain temperature.
After it becomes a paste, then it can be formed into blocks.
